  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the Potatoes with tsp Salt, tsp Black Pepper, and tsp Garlic Powder.
  3. Spread the Potatoes in a single layer on a large baking sheet.
  4. Roast for 15 minutes.
  5. While the Potatoes are roasting, crumble the Breakfast Sausage and add it to the baking sheet along with the diced Bell Pepper and Onion.
  6. Continue roasting for another 10 minutes, or until the sausage is cooked through and the vegetables are tender.
  7. Create eight wells in the mixture and crack an Egg into each well.
  8. Sprinkle with the remaining Salt, Black Pepper, and Garlic Powder.
  9. Return to the oven and bake for 5-7 minutes, or until the eggs are cooked to your liking.
