Prepare the Fries: Preheat oven to 400°F (200°C). Toss Fries ingredients with vegetable oil, paprika, garlic powder, and salt. Spread on a baking sheet and bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
Prepare the Tartar Sauce: Combine all Tartar Sauce ingredients in a small bowl and mix well. Refrigerate until ready to serve.
Prepare the Fish Batter: In a large bowl, whisk together flour, baking powder, salt, and pepper. Gradually whisk in cold beer until a smooth batter forms.
Fry the Fish: Heat vegetable oil in a large, heavy-bottomed pot or deep fryer to 350°F (175°C). Dip each cod fillet into the batter, ensuring it's fully coated. Carefully lower the battered fish into the hot oil and fry for 4-5 minutes per side, until golden brown and cooked through.
