  1. In a medium bowl, combine all Filling ingredients.
  2. In a small bowl, whisk together all Sauce ingredients.
  3. Lay out an egg roll wrapper on a clean surface. Place about cup of the filling in the center of the wrapper.
  4. Brush the edges of the wrapper with water. Fold the sides in, then roll tightly from the bottom up.
  5. Repeat with remaining wrappers and filling.
  6. Heat about 1 inch of vegetable oil in a large skillet or deep fryer to 350°F (175°C).
  7. Fry the egg rolls in batches for 2-3 minutes per side, or until golden brown and crispy.
  8. Drain on paper towels and serve immediately with the remaining Sauce for dipping.
