1/2 tsp Salt
1/4 tsp Black pepper
1 tbsp Olive oil

Instructions
  1. Season Chicken with Italian seasoning, salt, and pepper. Cook Chicken in a skillet until cooked through, then shred or dice. Set aside.
  2. Heat Olive oil in a large pot or Dutch oven over medium heat. Add Onion, Carrots, and Celery and cook until softened, about 5-7 minutes.
  3. Add Garlic and cook for 1 minute more.
  4. Pour in Chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  5. Stir in Heavy cream and Parmesan cheese until the cheese is melted and the sauce is smooth.
  6. Add Gnocchi and cook according to package directions, usually 2-3 minutes, or until they float to the surface.
  7. Stir in Spinach until wilted, about 1-2 minutes.
  8. Add cooked Chicken to the soup and heat through. Serve immediately.
