  1. In a bowl, combine all Marinade ingredients and marinate the Ground Chicken for at least 15 minutes.
  2. While the chicken marinates, prepare the Sauce by combining all Sauce ingredients in a separate bowl and whisking until well combined.
  3. Heat a large skillet or wok over medium-high heat. Add the marinated chicken and cook, breaking it up with a spoon, until browned and cooked through.
  4. Pour the Sauce over the cooked chicken and stir to coat. Bring to a simmer and cook for 2-3 minutes, until the sauce has thickened slightly.
  5. Stir in the Water Chestnuts, Green Onions, and Bamboo Shoots.
  6. Serve the chicken mixture in the Butter Lettuce leaves. Garnish with extra Green Onions if desired.
