Start the first song before you prep. Follow the recipe for cooking times, then let the final tracks carry you through cleanup.

  1. Place the Crabapples and water in a large pot. Bring to a boil, then reduce heat and simmer until the crabapples are very soft, about 30-40 minutes.
  2. Strain the crabapple mixture through a jelly bag or several layers of cheesecloth. Allow the juice to drip through undisturbed for several hours, or overnight. Do not squeeze the bag, as this will result in cloudy jelly.
  3. Measure the crabapple juice. For every cup of juice, add 4 cups of sugar. Combine the juice and sugar in a large, heavy-bottomed pot.
  4. Bring the mixture to a rolling boil over high heat, stirring constantly. Boil hard for 1 minute. Skim off any foam that forms on the surface.
  5. Remove from heat and stir in the Lemon Juice. Test for setting point by placing a small spoonful of jelly on a chilled plate. If it wrinkles when pushed with a finger, it's ready. If not, boil for another minute and test again.
  6. Pour the hot jelly into sterilized jars, leaving inch headspace. Process in a boiling water bath for 10 minutes. Let cool completely before storing.
