  1. Season Salmon with Italian seasoning, salt, and pepper.
  2. Heat Olive oil in a large skillet over medium-high heat. Add Salmon and cook for 3-4 minutes per side, or until cooked through.
  3. Remove Salmon from skillet and set aside.
  4. In the same skillet, add Garlic and cook for 1 minute until fragrant.
  5. Add Sun-dried tomatoes and cook for another minute.
  6. Pour in Heavy cream and Chicken broth. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  7. Stir in Spinach and cook until wilted, about 2 minutes.
  8. Stir in Parmesan cheese and Lemon juice.
  9. Return Salmon to the skillet and spoon sauce over the top. Serve immediately.
