  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. Prepare the Pie Crust: Unroll one sheet of refrigerated pie crust and fit it into a standard 9-inch pie dish. Trim any excess, leaving about a -inch overhang. Set aside.
  3. 3. Prepare the Filling: In a medium saucepan, combine the Water, Granulated sugar, Cream of tartar, Ground cinnamon, and Ground nutmeg. Bring the mixture to a boil over medium-high heat, stirring until the sugar dissolves. Reduce heat to low and simmer for 5 minutes.
  4. 4. Remove the saucepan from the heat and stir in the Unsalted butter and Lemon juice until the butter is melted.
  5. 5. Break the Saltine crackers into coarse pieces (about -inch to 1-inch) directly into the prepared pie crust, distributing them evenly.
  6. 6. Carefully pour the hot liquid mixture over the broken crackers in the pie dish, ensuring all crackers are moistened.
  7. 7. Unroll the second sheet of Pie Crust and place it over the filling. Crimp the edges of both crusts together to seal, then cut a few slits in the top crust to allow steam to escape.
  8. 8. Prepare the Topping: In a small bowl, mix the Granulated sugar and Ground cinnamon. Sprinkle this mixture evenly over the top pie crust.
  9. 9. Bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.
  10. 10. Let the pie cool completely on a wire rack before slicing and serving. This allows the filling to set properly.
