Dinner has a soundtrack. 15 songs paced to this 76-minute cook—from first chop to clean kitchen.

Start the first song before you prep. Follow the recipe for cooking times, then let the final tracks carry you through cleanup.

  1. Pat the Chicken wings dry with paper towels to remove excess moisture. In a large bowl, toss the 'Chicken' with 'All-purpose flour', 'Salt', and 'Black pepper-ground' until evenly coated.
  2. Prepare the Gochujang Sesame Sauce: In a medium bowl, whisk together all 'Gochujang Sesame Sauce' ingredients until smooth and well combined.
  3. First Fry: Heat the 'Vegetable oil-for frying' in a deep pot or Dutch oven to 325°F (163°C). Fry the chicken wings in batches for 6-7 minutes, until cooked through but not yet crispy. The internal temperature should reach 165°F (74°C). Remove wings with a slotted spoon and place on a wire rack set over a baking sheet to drain.
  4. Second Fry: Increase the oil temperature to 375°F (190°C). Return the partially fried wings to the hot oil in batches and fry for another 3-4 minutes, until deeply golden brown and very crispy. The crust should be audibly crisp when tapped.
  5. Toss and Serve: Immediately transfer the hot, double-fried wings to a large bowl. Pour the prepared 'Gochujang Sesame Sauce' over the wings and toss thoroughly until each wing is evenly coated. Garnish with 'Sesame seeds-toasted' and serve hot.
