  1. Prepare the Crust: In a large bowl, whisk together flour and salt. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, 1 tablespoon at a time, mixing until the dough just comes together. Form into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the Filling: Heat olive oil in a large skillet over medium heat. Add onion and cook until caramelized, about 15-20 minutes. Add garlic and cook for 1 minute more. Add mushrooms and cook until softened and browned, about 8-10 minutes. Deglaze the pan with sherry or white wine, scraping up any browned bits. Stir in balsamic vinegar and thyme. Season with salt and pepper.
  3. Assemble the Galette: Preheat oven to 375°F (190°C). On a lightly floured surface, roll out the chilled dough into a 12-inch circle. Transfer to a baking sheet lined with parchment paper. Spread the mushroom filling evenly over the dough, leaving a 2-inch border. Fold the border over the filling, pleating as you go.
  4. Brush the crust with egg wash. Bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbly. Let cool slightly before slicing and serving.
