A simple and hearty Egyptian fava bean stew, perfect for a quick and satisfying meal.
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add chopped onion and cook until softened, about 5 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Stir in the drained and rinsed fava beans, vegetable broth, lemon juice, cumin, chili powder, salt, and pepper.
- Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 30 minutes, stirring occasionally, until the beans are softened and the flavors have melded.
- Mash some of the fava beans with the back of a spoon to create a thicker consistency.
- To serve, ladle the Ful Medames into bowls. Drizzle with olive oil, garnish with fresh parsley, and serve with lemon wedges.
