In a large bowl, combine the Warm Water, Sugar, and Active Dry Yeast. Let sit for 5-10 minutes until foamy.
Add the All-Purpose Flour, Salt, and Olive Oil to the yeast mixture. Knead for 5-7 minutes until a smooth dough forms.
Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 1 hour, or until doubled in size.
While the dough rises, prepare the Sauce. In a saucepan, combine all Sauce ingredients and simmer for 15 minutes.
Preheat oven to 375°F (190°C).
Punch down the dough and divide into 8 equal pieces. Roll each piece into a 6-inch circle.
Place a spoonful of Sauce and a handful of Mozzarella Cheese in the center of each circle. Fold the dough over to form a half-moon shape and crimp the edges to seal.
Place the pizza pockets on a baking sheet lined with parchment paper. Brush with Garlic Butter.
Bake for 15-20 minutes, or until golden brown.
Garnish with Fresh Parsley before serving.
