  1. 1. To make the Homemade Soy Sauce: In a saucepan, bring all Homemade Soy Sauce ingredients to a simmer. Reduce heat and simmer for 30 minutes. Remove from heat and let cool completely. Strain and discard solids. Store in an airtight container in the refrigerator.
  2. 2. Soak glass noodles in warm water for 30 minutes, or until softened. Drain well.
  3. 3. In a bowl, combine all Wagyu Beef ingredients and marinate for at least 45 minutes.
  4. 4. In a separate bowl, combine all Sauce ingredients and set aside.
  5. 5. Heat a large skillet or wok over medium-high heat. Add marinated beef and cook in batches until browned. Set aside.
  6. 6. Add onions, carrots, and king oyster mushrooms to the skillet and stir-fry until softened, about 5 minutes.
  7. 7. Add red bell pepper and baby spinach to the skillet and cook until the spinach is wilted, about 2 minutes.
  8. 8. Add the soaked glass noodles to the skillet, then pour Sauce over everything. Stir-fry until the noodles are evenly coated and heated through, about 3-5 minutes.
  9. 9. Return the cooked beef to the skillet. Add the enoki mushrooms and scallions and toss everything together well.
  10. 10. Serve immediately.
