  1. Soak glass noodles in warm water for 20 minutes, or until softened. Drain well.
  2. In a bowl, combine all Beef ingredients and marinate for 15 minutes.
  3. In a separate bowl, combine all Sauce ingredients and set aside.
  4. Heat a large skillet or wok over medium-high heat. Add marinated beef and cook until browned.
  5. Add onions, carrots, and shiitake mushrooms to the skillet and stir-fry until softened, about 5 minutes.
  6. Add spinach to the skillet and cook until wilted, about 1 minute.
  7. Add the soaked glass noodles to the skillet, and then pour Sauce over everything. Stir-fry until the noodles are evenly coated and heated through, about 3-5 minutes.
  8. Garnish with chopped scallions and sesame seeds. Serve immediately.
