  1. Heat Olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add Chicken from the Protein group and Andouille sausage and cook until browned, about 5-7 minutes. Remove from pot and set aside.
  3. Add Onion and Bell pepper from the Vegetables group to the pot and cook until softened, about 5 minutes.
  4. Add Garlic from the Vegetables group and cook for 1 minute more.
  5. Stir in Cajun seasoning, Smoked paprika, and Cayenne pepper (if using) from the Spices & Seasonings group.
  6. Add Rice from the Rice & Broth group and cook for 1 minute, stirring constantly.
  7. Pour in Chicken broth from the Rice & Broth group and bring to a boil.
  8. Stir in Kimchi from the Vegetables group and return Chicken and sausage to the pot.
  9. Reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked and liquid is absorbed.
  10. Season with Salt and Black pepper from the Spices & Seasonings group to taste. Let stand for 5 minutes before serving.
