  1. Prepare the Charred Scallion Yogurt: Toss the Scallions with 1 tablespoon Olive Oil. Heat a cast-iron skillet over medium-high heat. Add the Scallions and char for 3-5 minutes, turning occasionally, until softened and lightly browned with some black spots. Remove from heat, cool slightly, then finely chop.
  2. In a small bowl, combine the Plain Greek Yogurt, chopped Charred Scallions, Fresh Mint, Lemon Juice, and teaspoon Salt. Stir well and refrigerate until ready to serve.
  3. Form the Lamb Burgers: In a medium bowl, combine Ground Lamb, Garlic Powder, Onion Powder, 1 teaspoon Salt, and Black Pepper. Mix gently until just combined, being careful not to overwork the meat. Divide the mixture into 4 equal patties, about -inch thick. Create a slight indentation in the center of each patty to prevent bulging.
  4. Cook the Lamb Burgers: Heat 1 tablespoon Olive Oil in a large skillet over medium-high heat. Add the lamb patties and cook for 4-5 minutes per side for medium-rare (internal temperature 145°F / 63°C), or longer to desired doneness. A well-cooked burger will have an internal temperature of 160°F (71°C).
  5. Assemble the Burgers: Place cooked lamb patties on toasted Burger Buns. Top each burger with a generous dollop of Charred Scallion Yogurt, a Lettuce leaf, and a Tomato slice. Serve immediately.
