1 cup Brown Lentils-dried
3 cups Water
1/2 cup Red Onion-finely chopped
1 cup Cucumber-diced
1/2 cup Bell Pepper-diced (any color)

A simple and refreshing lentil salad, perfect as a side dish or light lunch. It's packed with flavor from fresh vegetables and a zesty lemon vinaigrette.
Instructions
  1. Rinse the Lentils under cold water.
  2. Combine the Lentils and Water in a medium saucepan and bring to a boil. Reduce heat and simmer for 20-25 minutes, or until lentils are tender but still hold their shape. Drain and let cool.
  3. While the lentils are cooling, prepare the Vegetables by chopping them as indicated.
  4. In a small bowl, whisk together all Dressing ingredients until emulsified.
  5. In a large bowl, combine the cooled Lentils, Vegetables, and Dressing. Toss gently to coat.
  6. Taste and adjust seasoning as needed. Serve immediately or chill for later.
