  1. Place cubed Potatoes in a large pot and cover with Chicken Broth. Bring to a boil and cook until potatoes are tender, about 15-20 minutes.
  2. While potatoes are cooking, melt Butter in a separate skillet over medium heat. Add diced Onion and cook until softened, about 5 minutes.
  3. Once potatoes are tender, carefully mash them with a potato masher or immersion blender, leaving some chunks for texture.
  4. Stir in cooked Onion, Milk, and Heavy Cream into the potato mixture. Season with Salt and Pepper.
  5. Heat through, but do not boil.
  6. Ladle soup into bowls and top with crumbled Bacon, Shredded Cheddar Cheese, Sour Cream, and Chopped Green Onions.
