  1. In a small bowl, whisk together all Sauce ingredients and set aside.
  2. Heat Avocado Oil in a carbon steel wok over high heat until shimmering.
  3. Add Red Onion, Carrots, and Ginger to the wok and stir-fry for 2-3 minutes, until slightly softened.
  4. Add Garlic and cook for another 30 seconds until fragrant.
  5. Add Wagyu Beef to the wok and stir-fry quickly for 1-2 minutes, until lightly browned but still rare.
  6. Push the ingredients to one side of the wok and pour in the Sauce. Cook for 30 seconds, stirring constantly.
  7. Add Cooked Rice and Sugar Snap Peas to the wok and stir-fry vigorously, breaking up any clumps, until everything is well combined and heated through (about 3-5 minutes).
  8. Remove from heat and drizzle with Black Truffle Oil. Garnish with Green Onions and grated Black Truffle. Serve immediately.
