  1. Divide the ground beef into 8 equal portions (about 3 oz or 85g each) and gently form into loose balls.
  2. Heat a large cast-iron skillet or griddle over medium-high heat until very hot, about 5 minutes. Add the vegetable oil.
  3. Place two beef balls on the hot skillet, spaced apart. Immediately place a generous pinch of thinly sliced yellow onion on top of each beef ball. Using a sturdy spatula or burger press, smash each beef ball firmly down into a thin patty, pressing the onions into the beef. Season generously with kosher salt and black pepper.
  4. Cook for 2-3 minutes until a deep brown, crispy crust forms. Scrape under the patty with the spatula, flip, and immediately place one slice of American cheese on top of each patty. Continue to cook for 1 minute, allowing the cheese to melt. Repeat with remaining beef balls and onions.
  5. While the burgers cook, lightly toast the potato buns on the griddle until golden brown, about 30 seconds per side.
  6. Assemble the burgers: place two cheeseburger patties on the bottom half of a toasted bun. Top with dill pickle slices and the top half of the bun. Serve immediately.
