  1. Prepare the Crust: In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, 1 tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the Filling: Heat olive oil in a large skillet over medium heat. Add the sliced onions, salt, and pepper. Cook, stirring occasionally, for 30-40 minutes, or until the onions are deeply caramelized and golden brown. Stir in the brown sugar and beef broth during the last 5 minutes of cooking.
  3. Assemble and Bake: Preheat oven to 375°F (190°C). Roll out the chilled dough and place it in a 9-inch pie dish. Pour the caramelized onion filling into the crust. Sprinkle the shredded cheddar cheese evenly over the top.
  4. Bake for 20-25 minutes, or until the crust is golden brown and the cheese is melted and bubbly. Let cool slightly before serving.
