  1. Heat Olive Oil in a large pot or Dutch oven over medium heat.
  2. Add Yellow Onion and cook until softened, about 5 minutes.
  3. Add Garlic and cook for 1 minute more, until fragrant.
  4. Add Butternut Squash and Vegetable Broth to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the squash is tender.
  5. Carefully transfer the soup to a blender (or use an immersion blender) and blend until smooth.
  6. Return the soup to the pot and stir in Heavy Cream, Cinnamon, Nutmeg, and Ginger.
  7. Season with Salt and Black Pepper to taste.
  8. Heat through gently. Do not boil.
  9. Serve hot, garnished with Toasted Pepitas, if desired.
