  1. Soak Beans: Rinse the dried red kidney beans and place them in a large bowl. Cover with 8 cups of water and let soak for at least 4 hours, or preferably overnight. Drain and rinse the beans.
  2. Cook Beans: Place the soaked and drained beans in a large pot or Dutch oven. Add 8 cups of fresh water and the bay leaf. Bring to a boil, then reduce heat and simmer for 1-1.5 hours, or until the beans are tender.
  3. Sauté Holy Trinity: While the beans are cooking, in a separate skillet, sauté the Holy Trinity (onion, celery, and bell pepper) over medium heat until softened, about 8-10 minutes.
  4. Add Sausage: Add the sliced smoked sausage to the skillet with the Holy Trinity and cook for another 5-7 minutes, until lightly browned.
  5. Combine: Add the sautéed vegetables and sausage to the pot with the cooked beans. Stir in the garlic powder, smoked paprika, cayenne pepper, thyme, salt, and pepper.
  6. Simmer: Continue to simmer for another 30 minutes, stirring occasionally, to allow the flavors to meld.
  7. Cook Rice: While the beans are simmering, cook the rice according to package directions. Typically, this involves bringing 4 cups of water to a boil, adding 2 cups of rice, reducing heat to low, covering, and simmering for 15-20 minutes.
  8. Serve: Serve the red beans over a bed of fluffy white rice.
