4 Bone-in Pork Chops - about 1 inch thick
1.5 lbs Red Potatoes - quartered
1 head Broccoli - cut into florets
2 tbsp Olive Oil
1 tsp Garlic Powder

Instructions
  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the Potatoes and Broccoli with 1 tbsp Olive Oil, Salt, and Pepper.
  3. In a separate small bowl, combine the remaining 1 tbsp Olive Oil, Garlic Powder, Onion Powder, Paprika, Salt, and Pepper.
  4. Rub the seasoning mixture all over the Pork Chops.
  5. Spread the Vegetables in a single layer on a large baking sheet.
  6. Place the Pork Chops on top of the Vegetables.
  7. Bake for 30-35 minutes, or until the Pork Chops reach an internal temperature of 145°F (63°C) and the Vegetables are tender.
  8. Let rest for 5 minutes before serving.
