  1. Preheat oven to 375°F (190°C).
  2. Season Chicken with salt and pepper.
  3. In a large pot or Dutch oven, brown Chicken over medium-high heat. Remove Chicken and set aside.
  4. Add Vegetables to the pot and cook until softened, about 5-7 minutes.
  5. To make the Sauce, melt Butter in the pot. Whisk in Flour and cook for 1 minute.
  6. Gradually whisk in Chicken broth until smooth. Bring to a simmer, stirring constantly.
  7. Add Thyme, Rosemary, salt, and pepper to the Sauce. Simmer for 5 minutes, or until thickened.
  8. Return Chicken to the pot. Add Frozen peas. Stir to combine.
  9. Pour the Chicken mixture into a 9-inch pie dish.
  10. Top with Pie crusts. Cut vents in the top crust.
  11. Bake for 30-40 minutes, or until the crust is golden brown and the filling is bubbly.
