  1. Divide the Ground Beef into 4 equal portions (about 4 oz each). Gently form each portion into a loose ball – do not overwork the meat.
  2. Heat the Vegetable Oil in a large cast iron skillet or heavy-bottomed pan over medium-high heat.
  3. Place the beef balls in the hot skillet and immediately smash them down very thin (about inch thick) using a sturdy spatula. Press firmly and hold for 10-15 seconds to get a good sear.
  4. Season the smashed patties with Salt and Black Pepper.
  5. Cook for 2-3 minutes per side, until a dark crust forms and the burgers are cooked through.
  6. During the last minute of cooking, place a slice of American Cheese on top of each burger to melt.
  7. Toast the Hamburger Buns if desired.
  8. Assemble the burgers: Spread Ketchup and Mustard on the buns. Add the cheeseburger, Pickles, and Onion. Serve immediately.
