Instructions
🎙️ Cook with voice coach- Prepare the Chicken Wings: Pat chicken wings thoroughly dry with paper towels. In a large bowl, toss wings with olive oil, 1 teaspoon kosher salt, and black pepper until evenly coated.
- Smoke the Wings: Arrange the seasoned wings in a single layer on a wire rack set over a baking sheet. Preheat a smoker to 250°F (120°C). Smoke the wings for 1.5 hours, or until the internal temperature reaches 165°F (74°C) and the skin is lightly rendered.
- Prepare the Peach-Habanero Sauce: While wings are smoking, combine all Peach-Habanero Sauce ingredients in a small saucepan. Bring to a simmer over medium heat, then reduce heat to low and cook for 15-20 minutes, stirring occasionally, until peaches are very soft.
- Blend the Sauce: Carefully transfer the cooked sauce mixture to a blender or use an immersion blender. Blend until smooth. Taste and adjust seasoning if needed.
- Finish the Wings: Increase smoker temperature to 375°F (190°C) or transfer wings to a preheated oven at the same temperature. Cook for another 15-20 minutes, or until the skin is crispy and the internal temperature reaches 175°F (79°C).
- Toss and Serve: In a large bowl, combine the crispy smoked wings with the prepared Peach-Habanero Sauce, tossing until each wing is well coated. Serve immediately.
