Dinner has a soundtrack. 28 songs paced to this 142-minute cook—from first chop to clean kitchen.

Start the first song before you prep. Follow the recipe for cooking times, then let the final tracks carry you through cleanup.

  1. Prepare the Chicken Wings: Pat chicken wings thoroughly dry with paper towels. In a large bowl, toss wings with olive oil, 1 teaspoon kosher salt, and black pepper until evenly coated.
  2. Smoke the Wings: Arrange the seasoned wings in a single layer on a wire rack set over a baking sheet. Preheat a smoker to 250°F (120°C). Smoke the wings for 1.5 hours, or until the internal temperature reaches 165°F (74°C) and the skin is lightly rendered.
  3. Prepare the Peach-Habanero Sauce: While wings are smoking, combine all Peach-Habanero Sauce ingredients in a small saucepan. Bring to a simmer over medium heat, then reduce heat to low and cook for 15-20 minutes, stirring occasionally, until peaches are very soft.
  4. Blend the Sauce: Carefully transfer the cooked sauce mixture to a blender or use an immersion blender. Blend until smooth. Taste and adjust seasoning if needed.
  5. Finish the Wings: Increase smoker temperature to 375°F (190°C) or transfer wings to a preheated oven at the same temperature. Cook for another 15-20 minutes, or until the skin is crispy and the internal temperature reaches 175°F (79°C).
  6. Toss and Serve: In a large bowl, combine the crispy smoked wings with the prepared Peach-Habanero Sauce, tossing until each wing is well coated. Serve immediately.
