  1. In a large pot or Dutch oven, melt Butter over medium heat.
  2. Add Yellow Onion and Celery to the pot and cook until softened, about 5-7 minutes.
  3. Add Russet Potatoes and Chicken Broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  4. In a small bowl, whisk together All-Purpose Flour and Cold Water to create a slurry. Gradually whisk the slurry into the simmering chowder to thicken it.
  5. Stir in Heavy Cream, Dried Thyme, Black Pepper, and Salt. Heat through, but do not boil.
  6. Gently fold in flaked Smoked Salmon and Fresh Dill. Cook for another 2-3 minutes, until salmon is heated through.
  7. Serve immediately.
