  1. Rinse the Dried Split Peas thoroughly under cold water.
  2. In a large pot, combine the rinsed Dried Split Peas and Water. Bring to a boil, then reduce heat and simmer for 45-50 minutes, or until the peas are very tender.
  3. While the peas are simmering, heat the Olive Oil in a separate pan over medium heat. Add the diced Yellow Onion and cook until softened, about 5 minutes. Add the minced Garlic and cook for another minute until fragrant.
  4. Drain most of the water from the cooked Split Peas, leaving about cup of the cooking liquid. Add the cooked Onion and Garlic mixture to the peas.
  5. Season with Salt, Black Pepper, and Dried Thyme. Mash with a potato masher or fork to desired consistency. Add more cooking liquid if needed to reach desired consistency.
  6. Serve hot.
