Instructions
- Heat Vegetable Oil in a large pot or Dutch oven over medium heat.
- Add Onion and cook until softened, about 5 minutes.
- Add Garlic and cook for 1 minute more, until fragrant.
- Stir in Tomato Paste and cook for 2 minutes, stirring constantly.
- Add Diced Tomatoes (with their juice), Okra, Salt, Black Pepper, and Cayenne Pepper (if using).
- Bring to a simmer, then reduce heat to low, cover, and cook for 30-40 minutes, or until the okra is tender and the stew has thickened.
- Stir occasionally to prevent sticking.
