1 (28 oz) can Diced Tomatoes-undrained
1 medium Onion-chopped
2 cloves Garlic-minced
1 tsp Salt

Instructions

  1. Heat Vegetable Oil in a large pot or Dutch oven over medium heat.
  2. Add Onion and cook until softened, about 5 minutes.
  3. Add Garlic and cook for 1 minute more, until fragrant.
  4. Stir in Tomato Paste and cook for 2 minutes, stirring constantly.
  5. Add Diced Tomatoes (with their juice), Okra, Salt, Black Pepper, and Cayenne Pepper (if using).
  6. Bring to a simmer, then reduce heat to low, cover, and cook for 30-40 minutes, or until the okra is tender and the stew has thickened.
  7. Stir occasionally to prevent sticking.
