  1. Preheat oven to 400°F (200°C).
  2. Wash and scrub Sweet Potatoes. Pierce several times with a fork.
  3. Bake Sweet Potatoes for 30-40 minutes, or until tender.
  4. While Sweet Potatoes are baking, cook Ground Beef in a skillet over medium heat. Drain off any excess grease. Stir in Taco Seasoning and set aside.
  5. Prepare Cheese Sauce: In a saucepan, melt Butter over medium heat. Whisk in Milk and heat through. Reduce heat to low and gradually add Cheddar Cheese, stirring until melted and smooth.
  6. Once Sweet Potatoes are cooked, slice them lengthwise and scoop out some of the flesh, leaving about inch border.
  7. Fill Sweet Potato halves with Ground Beef, then drizzle with Cheese Sauce.
  8. Top with Diced Tomatoes, Sliced Black Olives, Sour Cream, and Sliced Green Onions.
  9. Serve immediately.
