Instructions
  1. Prepare the Crust: In a large bowl, whisk together the flour and salt. Cut in the shortening using a pastry blender or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the Filling: In a large bowl, combine the mashed sweet potatoes, sugar, evaporated milk, eggs, melted butter, cinnamon, nutmeg, ginger, and salt. Mix well until smooth.
  3. Assemble and Bake: Preheat oven to 350°F (175°C). Roll out the chilled dough on a lightly floured surface and transfer to a 9-inch pie plate. Trim and crimp the edges. Pour the sweet potato filling into the crust. Bake for 50-60 minutes, or until the filling is set and the crust is golden brown. Let cool completely before serving.
