A comforting and flavorful sweet potato loaded with seasoned ground beef, cheese, and a dollop of sour cream. This version aims to replicate the classic Roadhouse experience with readily available ingredients.

Wash and scrub the Sweet Potatoes. Pierce each potato several times with a fork.
Bake Sweet Potatoes for 45-60 minutes, or until tender when pierced with a fork.
While the potatoes are baking, prepare the Ground Beef Filling. In a large skillet, brown the Ground Beef over medium-high heat. Drain off any excess grease.
Add the diced Onion to the skillet and cook until softened, about 5 minutes.
Stir in the Garlic Powder, Chili Powder, Smoked Paprika, Cayenne Pepper, Salt, and Black Pepper. Cook for another 2 minutes, stirring constantly.
Once the Sweet Potatoes are cooked, carefully slice them open lengthwise.
Fluff the inside of each Sweet Potato with a fork.
Top each Sweet Potato with the Ground Beef Filling, Shredded Cheddar Cheese, a dollop of Sour Cream, and Chopped Green Onions.
Dot each potato with Butter before serving.
