  1. Heat Olive oil in a large pot or Dutch oven over medium heat.
  2. Add Onion, Carrots, and Celery to the pot and cook until softened, about 5-7 minutes.
  3. Add Butternut squash and Corn to the pot and cook for another 3-5 minutes.
  4. Pour in Vegetable broth and bring to a boil.
  5. Reduce heat to low, add Kidney beans, Thyme, and Smoked paprika. Season with Salt and Black pepper to taste.
  6. Simmer for 30-40 minutes, or until the squash is tender.
  7. Serve hot.
