Start the first song before you prep. Follow the recipe for cooking times, then let the final tracks carry you through cleanup.

  1. Heat Olive oil in a large pot or Dutch oven over medium-high heat.
  2. Season Chicken with salt and pepper. Add Chicken to the pot and brown on all sides. Remove Chicken and set aside.
  3. Add Onion, Carrots, and Celery to the pot and cook until softened, about 5-7 minutes.
  4. Stir in Flour and cook for 1 minute.
  5. Gradually whisk in Chicken broth, scraping up any browned bits from the bottom of the pot.
  6. Add Potatoes, Thyme, and Rosemary. Bring to a boil, then reduce heat and simmer for 20 minutes, or until Potatoes are tender.
  7. Return Chicken to the pot and simmer for another 10 minutes.
  8. Stir in Frozen peas during the last 5 minutes of cooking.
  9. Taste and adjust seasoning as needed.
