  1. In a bowl, toss Pork with olive oil, salt, and pepper.
  2. Heat a large skillet or Dutch oven over medium-high heat. Add Pork and cook until browned on all sides, about 8-10 minutes. Remove Pork from skillet and set aside.
  3. In the same skillet, combine all Chutney ingredients. Bring to a simmer and cook for 20-25 minutes, or until cherries are softened and chutney has thickened.
  4. Return Pork to the skillet with the chutney. Stir to coat and simmer for another 10-15 minutes, or until Pork is cooked through and flavors have melded.
  5. Serve hot with rice or roasted vegetables.
