  2. Season Chicken with salt and black pepper; smoke at 250 degrees Fahrenheit over hickory wood for 60 minutes until internal temperature reaches 160 degrees Fahrenheit.
  3. Move wings to direct heat (450 degrees Fahrenheit) for 3-5 minutes per side until the skin is blistered and crisp.
  4. Remove from heat and lightly toss with the chilled Sauce immediately before serving.
