Instructions
  1. Preheat oven to 350°F (175°C).
  2. Place the Pie Crust in a 9-inch pie plate and crimp the edges.
  3. Blind bake the crust for 10-12 minutes, or until lightly golden. Let cool.
  4. Arrange Tomato slices in a single layer in the pre-baked pie crust. Sprinkle with Salt and Pepper.
  5. In a medium bowl, combine all Sauce ingredients and mix well.
  6. Spread half of the Sauce evenly over the Tomato layer.
  7. Sprinkle 1 cup of Cheddar Cheese and 1/2 cup of Monterey Jack Cheese over the sauce.
  8. Repeat layers: Tomatoes, remaining Sauce, remaining Cheddar and Monterey Jack Cheese.
  9. Bake for 45-50 minutes, or until golden brown and bubbly.
  10. Let cool slightly before serving.
