Fried Sunchoke And Sage Patties

Olive Oil

Garlic-minced

Onion-finely chopped

Simple and satisfying patties made with sunchokes, sage, and a touch of flour for binding. A great way to enjoy this often-overlooked root vegetable.
Instructions
- Heat 2 tbsp Olive Oil in a skillet over medium heat. Add Onion and cook until softened, about 5 minutes.
- Add Garlic and cook for another minute until fragrant.
- In a large bowl, combine grated Sunchokes, cooked Onion and Garlic, Flour, Sage, Egg, Salt, and Pepper.
- Mix well until everything is combined.
- Heat Vegetable Oil in a separate skillet over medium-high heat.
- Form the sunchoke mixture into patties (about 1/4 cup each).
- Fry the patties for 3-4 minutes per side, or until golden brown and crispy.
- Serve immediately.
