Instructions
  1. Heat 2 tbsp Olive Oil in a skillet over medium heat. Add Onion and cook until softened, about 5 minutes.
  2. Add Garlic and cook for another minute until fragrant.
  3. In a large bowl, combine grated Sunchokes, cooked Onion and Garlic, Flour, Sage, Egg, Salt, and Pepper.
  4. Mix well until everything is combined.
  5. Heat Vegetable Oil in a separate skillet over medium-high heat.
  6. Form the sunchoke mixture into patties (about 1/4 cup each).
  7. Fry the patties for 3-4 minutes per side, or until golden brown and crispy.
  8. Serve immediately.
