  1. Preheat oven to 400°F (200°C).
  2. Wash and scrub the Potatoes thoroughly.
  3. Prick each potato several times with a fork.
  4. Rub the Potatoes with Olive Oil, Salt, and Black Pepper.
  5. Place the Potatoes directly on the oven rack or on a baking sheet.
  6. Bake for 45-60 minutes, or until easily pierced with a fork.
  7. Carefully remove the Potatoes from the oven.
  8. Cut a slit in each potato and fluff the inside with a fork.
  9. Top with Sour Cream, Cheddar Cheese, and Chives.
