  1. Rinse the Barley under cold water until the water runs clear.
  2. In a large pot, combine the Barley, Salt Pork, Water, Salt, Pepper, and Bay Leaf (if using).
  3. Bring to a boil, then reduce heat to low, cover, and simmer for 45-50 minutes, or until the barley is tender and the liquid is absorbed. Stir occasionally to prevent sticking.
  4. Remove the Bay Leaf before serving. Adjust seasoning to taste.
