Instructions
- Cook the Ground beef according to package directions. Drain off any excess grease and stir in Taco seasoning. Set aside.
- Cook the Elbow macaroni according to package directions. Drain and set aside.
- In a large pot, melt the Butter over medium heat. Whisk in the All-purpose flour and cook for 1-2 minutes, creating a roux.
- Gradually whisk in the Milk, stirring constantly until the sauce thickens. Bring to a simmer.
- Reduce heat to low and stir in the Cheddar cheese and Monterey Jack cheese until melted and smooth. Season with Salt and Black pepper.
- Add the cooked macaroni and the seasoned Ground beef to the cheese sauce. Stir to combine.
- Serve immediately, topped with Diced tomatoes, Sliced black olives, Sour cream, and Sliced green onions.
