  1. Preheat oven to 400°F (200°C).
  2. Season Chicken with Cajun seasoning, garlic powder, and black pepper.
  3. Cook chicken breasts until fully cooked (internal temperature of 165°F/74°C). Let cool and shred.
  4. Combine all Sauce ingredients in a bowl and mix well.
  5. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  6. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  7. Gradually add buttermilk, mixing until just combined. Do not overmix.
  8. Turn dough out onto a lightly floured surface and pat down to about 1 inch thickness. Cut out biscuits using a biscuit cutter.
  9. Place biscuits on a baking sheet and bake for 12-15 minutes, or until golden brown.
  10. Toss shredded chicken with the Sauce.
  11. Split biscuits and fill with Cajun chicken mixture. Serve immediately.
