Season Chicken with garlic powder, paprika, salt, and pepper.
Cook Chicken: Grill, bake, or pan-fry chicken until cooked through (internal temperature of 165°F / 74°C). Let cool slightly and shred.
Prepare Sauce: In a small saucepan, combine Sauce ingredients. Heat over medium heat, stirring until butter is melted and sauce is well combined.
Combine: In a bowl, toss shredded chicken with Buffalo sauce.
Assemble: Spread Blue cheese dressing on two slices of bread. Top with Buffalo chicken and cheddar cheese. Top with remaining bread slices.
Grill: Butter the outside of each bread slice. Grill sandwiches over medium heat for 3-4 minutes per side, or until golden brown and cheese is melted.
