Dinner has a soundtrack. 15 songs paced to this 75-minute cook—from first chop to clean kitchen.

Start the first song before you prep. Follow the recipe for cooking times, then let the final tracks carry you through cleanup.

  1. Grate the Sweet Potatoes using a box grater. Place the grated sweet potato in a clean kitchen towel and squeeze out as much excess moisture as possible. This is crucial for crispy latkes.
  2. In a large bowl, combine the Sweet Potato Mixture ingredients. Mix well until everything is evenly incorporated.
  3. Heat the Vegetable Oil in a large skillet over medium-high heat. The oil should be hot enough to sizzle when a small piece of the mixture is dropped in.
  4. Drop spoonfuls of the sweet potato mixture into the hot oil, flattening them slightly with the back of a spoon. Do not overcrowd the skillet.
  5. Fry for 3-4 minutes per side, or until golden brown and crispy.
  6. Remove the latkes from the skillet and place them on a paper towel-lined plate to drain excess oil.
  7. Serve immediately with Sour Cream and Maple Syrup, if desired.
