Dinner has a soundtrack. 19 songs paced to this 90-minute cook—from first chop to clean kitchen.

Start the first song before you prep. Follow the recipe for cooking times, then let the final tracks carry you through cleanup.

  1. Prepare the Dough: In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Gradually add the ice water, mixing until the dough comes together. Form into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the Filling: Heat the olive oil in a large skillet over medium-high heat. Add the sliced onion and bell pepper and cook until softened, about 5-7 minutes. Add the sliced steak and cook until browned, about 5-7 minutes. Season with garlic powder and black pepper.
  3. Assemble the Empanadas: Preheat oven to 375°F (190°C). On a lightly floured surface, roll out the dough to about inch thickness. Cut out circles using a 4-5 inch cookie cutter or bowl. Place a spoonful of the steak filling and a sprinkle of provolone cheese in the center of each circle. Fold the dough over to form a half-moon shape and crimp the edges with a fork to seal.
  4. Bake the Empanadas: In a small bowl, whisk together the egg and water to create an egg wash. Brush the tops of the empanadas with the egg wash. Bake for 20-25 minutes, or until golden brown.
