1 lb Chicken-cooked and shredded
1 (10 oz) can Red Enchilada Sauce
1 tsp Chili Powder
1/2 tsp Cumin
1 (15 oz) can Black Beans-rinsed and drained

Instructions
  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine all Sauce ingredients and set aside.
  3. In a large bowl, combine Chicken, Black Beans, Corn, and Diced Green Chiles.
  4. Pour half of the Sauce mixture over the chicken mixture and stir to combine.
  5. Spread the chicken mixture evenly into a 9x13 inch baking dish.
  6. Pour the remaining Sauce over the chicken mixture.
  7. Sprinkle with Cheddar Cheese and Monterey Jack Cheese.
  8. Bake for 20-25 minutes, or until bubbly and cheese is melted.
  9. Top with Sour Cream and Chopped Green Onions before serving.
