  1. Preheat oven to 375°F (190°C). Season Chicken with salt and pepper.
  2. In a large pot or Dutch oven, brown Chicken over medium-high heat. Remove Chicken and set aside.
  3. Add Onion and cook until softened, about 5 minutes. Add Carrots and Celery and cook for another 5 minutes.
  4. Melt Butter in the pot. Whisk in flour and cook for 1 minute to create a roux.
  5. Gradually whisk in Chicken broth until smooth. Bring to a simmer, stirring constantly.
  6. Stir in Heavy cream, Thyme, salt, and pepper. Return Chicken to the pot. Add Frozen peas.
  7. Simmer for 10-15 minutes, or until Chicken is cooked through and sauce has thickened.
  8. Pour Chicken mixture into a 9x13 inch baking dish.
  9. Arrange Biscuits evenly over the top of the filling.
  10. Bake for 20-25 minutes, or until biscuits are golden brown and filling is bubbly.
