Instructions
  1. Season Chicken with Salt and Pepper.
  2. In a large pot or Dutch oven, combine Chicken, Broth ingredients. Bring to a boil, then reduce heat and simmer for 60 minutes, or until chicken is cooked through.
  3. Remove chicken from pot and shred. Discard bay leaf, onion, carrots, and celery.
  4. Return shredded chicken to the pot.
  5. In a separate bowl, whisk together Flour, Baking Powder, and Salt for the Dumplings.
  6. Add Milk and Melted Butter to the dry ingredients and stir until just combined. Do not overmix.
  7. Drop Dumpling batter by spoonfuls into the simmering broth. Cover and cook for 15-20 minutes, or until dumplings are cooked through.
  8. Stir in Poultry Seasoning and Thyme. Serve hot.
