  1. Cook Ramen Noodles according to package directions, discarding the seasoning packet. Drain and set aside.
  2. Shuck the Corn and grill, boil, or pan-fry until slightly charred. Cut the kernels off the cob.
  3. In a medium bowl, combine all Sauce ingredients. Mix well.
  4. In a large skillet, combine cooked Ramen Noodles, corn kernels, and Sauce. Toss to coat evenly.
  5. Cook over medium heat for 5-7 minutes, stirring occasionally, until heated through.
  6. Garnish with Cotija Cheese, Cilantro, and Chili Powder. Serve immediately.
